Chocolate & Cherry Birthday Cake

This Goodness Kitchen cake makes the perfect cake for any occassion - Birthday, Baby Shower, Saturday afternoon baking... just because! Why not get the little ones involved too?

Chocolate cake:
250g plain flour
200g caster sugar
100g brown sugar
50g dark cocoa powder sugar free
2 eggs
100ml oil
200ml milk
1tsp vinegar
1 tsp baking powder
2 tsp baking soda
50g dark chocolate chopped

Mascarpone Frosting
250g mascarpone
125g icing sugar
200ml heavy cream
1tsp vanilla essence

Cherry Jam
200g Frozen Goodness Kitchen Dark Cherries
80g sugar
1 -2 tsp water
1.5 tablespoon corn flour

Method:
In a small boil add the milk and vinegar set aside for 2 minutes.
In a large bowl beat whisk together the eggs, oil, sugar, milk & vinegar. Whisk till the sugar has dissolved.
Sift in the flour, baking soda and baking powder to the wet mixture. Folding through to combine. Fold in the chopped dark chocolate.

Divide the mixture evenly between 3 lined baking tins. Bake in a preheated oven at 175 for 22-23 minutes. The cakes should be firm to touch. To test the cakes are cooked place a skewer through the middle, if the skewer runs clean the cake is ready.

Set the cakes aside to cool slightly in the tin, gently transfer to a wire rack to allow cool fully.

To make the jam
Add the frozen Goodness Kitchen cherries to a pot with the sugar. Cook on a low heat for 10-15 minutes, stirring often. In a small bowl combine the corn flour and water, mix to form a slurry. Add the corn flour mixture to the cherries. Cook out for 4-5 minutes, ensuring to stir. Remove from the heat, set aside. The mixture will begin to thicken.

To make the frosting
Whip together the mascarpone, vanilla essence, and icing sugar. Pour in the cold heavy cream and whip till fluffy. Be careful not to over whip. Transfer to a piping bag. Place the piping bag into the fridge un-till you are ready to use.

To assemble
Place one chocolate cake down first. Spread 1/3 of the frosting on top. Spoon 1/3 of the Goodness kitchen cherry jam on top. Using a spatula spread out evenly. Repeat this between each layer. On the final layer add the frosting & cherry jam. Spread evenly with a spatula.

Garnish with Goodness Kitchen Choc Bites Cherries Single-Dipped in Smooth Dark Choc on top & mascarpone frosting if you wish.

Breakfast Yoghurt Berry Bake

This easy morning breakfast choice for the whole family can be prepared in advance making the morning rush a little easier.

Ingredients: 

350g plain yoghurt
1 tsp vanilla
4 eggs
2 tbsp almond flour
1.5 cup Goodness Kitchen Raspberries
1 cup Goodness Kitchen Choc Bites NZ Blueberries

Preheat the oven to 180 degrees. Grease an oven proof dish with butter.

In a bowl combine the eggs, yogurt, vanilla, almond flour, 1 cup Goodness Kitchen Raspberries and ½ cup of Choc Bites NZ Blueberries. Mix till combined.

Pour the mixture into a baking dish. Sprinkle over ½ cup of Goodness Kitchen Raspberries and ½ cup of Choc Bites NZ Blueberries. Place into the oven and bake for 40 mins.

To serve, cut the bake into slices & drizzle over honey or maple syrup.

DIY Goodness Kitchen Choc Bites & Mixed Berries ice cream

Ingredients:

500g vanilla ice-cream

450g Goodness Kitchen Certified Organic Mixed Berries

50g Goodness Kitchen Choc Bites

Method:

Add the ice-cream and Goodness Kitchen Certified Organic Mixed Berries into a blender.

Blitz until smooth. Transfer the mixture to a freezer safe container.

Sprinkle over 50g Choc Bites NZ Blueberries.

Place back into the freezer to set for 2 hours.

Serve in a bowl or in ice cream cones.
